Ways to Eat More Green Vegetables
 

Happy St. Patrick's Day! Today, we are highlighting ways to eat more green vegetables. In our healthy lifestyle groups for individuals with Down syndrome, we discuss a variety of tips for eating more vegetables, including how we can add vegetables to foods we already eat. 

  1. Add spinach to an omelet or top a pizza with spinach.

  2. Blend spinach or kale into pasta sauce or smoothies. 

  3. Eat noodles or fries made with zucchini.

  4. Dip cucumbers or broccoli in a healthy yogurt dip. 

  5. Dip green peppers in hummus. 

  6. Make "ants on a log" with celery, raisins, and nut butter. 

  7. Use lettuce in place of a bun or wrap. 

  8. Make vegetable soup with green beans, peas, zucchini, celery, and/or broccoli.
