Happy St. Patrick's Day! Today, we are highlighting ways to eat more green vegetables. In our healthy lifestyle groups for individuals with Down syndrome, we discuss a variety of tips for eating more vegetables, including how we can add vegetables to foods we already eat.

Add spinach to an omelet or top a pizza with spinach.

Blend spinach or kale into pasta sauce or smoothies.

Eat noodles or fries made with zucchini.

Dip cucumbers or broccoli in a healthy yogurt dip.

Dip green peppers in hummus.

Make "ants on a log" with celery, raisins, and nut butter.

Use lettuce in place of a bun or wrap.

Make vegetable soup with green beans, peas, zucchini, celery, and/or broccoli.
